My (Weight Loss Friendly) Creamy Cauliflower Soup

Comfort food that won't sabotage your weight loss goals.


It can be difficult to stick to your weight loss goals as winter approaches and the cravings for hearty and indulgent comfort foods kick in. 


So…. I created this Creamy Cauliflower Soup recipe that is going to really hit the spot.


This cream cauliflower soup is: 

  • Really, really creamy

  • Nourishing, comforting and satisfying 

  • High in fiber to support weight loss and digestion 

  • Immune boosting and nutrient rich [b vitamins, vitamin c, phytonutrients]

  • Anti-inflammatory and antioxidant rich 

  • Easy, versatile and perfect to prep for the week 




YOUR SHOPPING LIST 


  • 1 large head of cauliflower (700-800g), roughly cut into florets

  • 2-3 garlic cloves, smashed with a knife

  • 1 medium leek, rinsed well and roughly chopped

  • 4 tablespoons of olive oil

  • 1 teaspoon of turmeric powder

  • 1/2 teaspoon of cumin seeds

  • A pinch of chili flakes (optional)

  • 3-4 cups (750mL- 1L) of vegetable stock or quality bone broth

  • 1/2 a cup of coconut milk

  • Salt and pepper

  • Parsley or coriander to serve

  • Hemp seeds, raw pepitas to serve


THE RECIPE 


  • Preheat the oven to 200 degrees celsius

  • Spread the cauliflower florets over a lined baking tray

  • In a small bowl add the turmeric, cumin, chilli and 3 tablespoons of olive oil and mix well

  • Cover the cauliflower florets evenly with the mixture (you can always add more olive oil if there is not enough mixture)

  • Bake the cauliflower and smashed garlic cloves for 30mins until tender and evenly cooked

  • In a large pot, over a medium heat, fry the leek in tablespoon of olive oil for 3 mins

  • Add the entire contents of the baking tray into the pot a stir to combine

  • Add the broth and coconut milk and bring to the boil and simmer on low for 15-20mins

  • Using a stick blender or high speed blender and blend till smooth.

  • Garnish with fresh herbs and 1 tablespoon of hemp seeds and pepitas to serve

Note: This soup is low in protein. You can pair this soup with eggs, chicken, tuna or chickpeas!
